When you’re hungry and don’t want to go to the store, quesadillas make a great quick fix for either lunch or dinner. You can use whatever you have on hand–black beans, refried beans, bell peppers, spinach, tomatos, chilis, corn, chicken, cilantro, onion, etc etc. As long as you have cheese and a tortilla, you’ve got a quesadilla.
This week I used refried beans, a small can of diced green chilis, red onion, and half a tomato. It gets melty and pretty messy, but super delicious.
Assemble, then put in a dry sautee pan on the lowest heat you have. You want to make sure that the inside gets sufficiently hot and melty without the outside tortilla burning, and that will take a few minutes. Serve with salsa, guacamole, or sour cream. Enjoy!
