One of the best food traditions that I picked up while spending a year in England is the phenomenon of beans on toast. Besides malt vinegar and PG Tips, it’s my favorite British food thing.
We desperately need to go to the grocery store, but because I’ll be travelling for work all next week (post to follow) I don’t really want to buy much fresh stuff. But, I had to buy eggs for my corn cakes, so now I’ve got a bunch of eggs and nothing to do with them.
I figured I would make my favorite British meal for dinner! Eggs over easy on top of toast, with a can of British baked beans slathered over the top. Sounds weird, but it’s really good, I promise. Also super healthy, with tons of fiber and protein.
The only thing is you have to make sure you buy the British baked beans, not the American ones. American style have a ton of sugar and sometimes ham mixed in with the beans, and it does not go well with the eggs at all.
Buy Heinz brand if you can find them–they’re expensive because they’re imported, but totally worth it for that non-sugarized flavor. Unfortunately I had crappy cheap beans from Aldi (see previous post) so my dinner wasn’t as good as it could have been. I also suck at making eggs over easy…it’s so hard to flip them! But still. Yum.
