Since I desperately need to go to the grocery store and can’t cook anything until I do, here’s another guest post for a weekend favorite.
This is a family favorite (at least with some members of the family!). Easy to make, can be prepared the nite before, great if you have company, and it keeps and reheats really well.
- 1 dozen eggs
- 1/2 stick butter
- 1 pound monterrey jack cheese, grated
- 1 pint cottage cheese
- diced green chile (7 ounce can or 1 cup fresh)
- 1/4 cup flour
- 1 tablespoon baking powder
- salt, pepper, garlic to taste
Preheat oven to 400 degrees. Soften/melt the butter in a glass cake pan. Beat the eggs, and mix together with the rest of the ingredients (sift in the flour & baking powder to prevent clumping) in the cake pan. Bake for 30-35 minutes until golden brown on top. Delicious!!
