Why did I decide to make a tomato recipe in January? I don’t know. The tomatoes are not very good and they are extremely expensive. This is a good-looking side dish, and excellent for the summer when tomatoes are actually in season. Full of cheese, garlic, and basil–it’s a classic!
- 2 tomatoes, cut in half
- 1/4 cup toasted breadcrumbs
- 1/4 cup shredded mozzarella
- 2 tablespoons shredded romano
- 1/2 package of basil
- 2 small cloves garlic
- Olive oil
Preheat the oven to 325. Using a spoon (and knife if necessary), scoop out the insides/seeds of the tomatoes. Eat with salt if you like that kind of thing. Combine all the other ingredients and use enough olive oil to make it into a kind of paste.
Fill the tomatoes with the mixture and top with additional shredded cheese and a pinch of salt. Bake for 7-12 minutes, until cheese has melted and gotten bubbly. Enjoy! Great served along with pasta, bread, or meat.
